On the back cover I see the Miramax Home Entertainment logo and a Buena Vista Home Entertainment, Inc. copyright.
In the DVD credits at the very beginning before the DVD menu, there is the full name Miramax Home Entertainment.
So I am under the impression Miramax is the DVD publisher/distributor, licensed from Buena Vista, and that only Miramax has to be entered into the new Media Publisher field. No studio credit for Miramax Home Entertainment.
What do you think?

Miramax is owned by Disney.  Their films are released, on DVD, by BVHE under the MHE banner.  To be 'most' correct, you should enter both of them.  In my local, I entered MHE first.

For instance, on the back cover of my copy of "The Graduate" (R2) it expressly says it is distributed by Universal Pictures but, "Kinowelt" and "Studio Canal" logos are there too.

It depends on the 'Studio Canal' logo.  In the Miramax example, both MCs were included on the case.  I don't know, based on the information you are giving me, whether or not the Studio Canal logo is for the MC or the film company.

The Graduate?/ Dustin Hoffman?  That film should definatley be MGM/UA or MGM Home Entertainment( Embassy Pictures )  not Universal Pictures ., But then again being R2 , I have no idea what studios overseas are willing to handle other MHE  banner . maybe Universal  but not Pictures ..

On the back cover of my copy of The Graduate it reads: "Prodotto, venduto e distribuito da Universal Pictures Italia S.r.l.", that is "Produced, sold and distributed by Universal Pictures Italia S.r.l.".
On the back cover there are three logos: "KINOWELT", "STUDIO CANAL", "UNIVERSAL" (that's what is written in the logos).
In the DVD credits at the very beginning befiore the menu, there is a copyright notice of a subsiadary company of Canal+, and three logos of "STUDIO CANAL (Canal+)", "KINOWELT Home Enterteinment" and "ART HAUS".

You can't say that. Nothing is set in stone in this department: you can never assume that just because it's MGM in one locality that that goes for other localities as well. For the record: the back cover of my Dutch copy of 'The Graduate' explicitly says "Distributed by Universal Pictures" as well, with no reference to MGM whatsoever.

At a closer look, it's on the back cover as well, in smallprints:
"(c) 1967 Lawrence Turman Inc. - DEG Sale Company B-V, a subsidiary of Canal +. Tutti i diritti riservati"

If it were me, I would enter them as:

Canal+
KINOWELT Home Enterteinment
Universal Pictures

I picked that order because the first two are in the DVD credits while Universal is only on the case.
