I'm doing the extended crew for John Carpenter's "The Thing". I know this movie by heart, and having listened to the commentary and watching the making-of multiple times, know for a fact that Stan Winston did the dog-creature effect. If memory serves me, he was brought in at the last minute to replace someone else who couldn't get it good enough.

In the end credits he is not listed for this, but has a "Special thank you" in it's own spot directly under other effects credits.
I went to include him but recalled the "uncredited" is only on the cast, not the crew.

How should I go about this? I could get timed proof from commentary and documentary about his involvement, or does he just not get a credit because it's not listed (worded really) in the credits for it?

I'm afraid users will tell you that it's not allowed, no matter what concrete evidence you might be able to provide. The new 3.5 version of the program lets you track custom, local-only crew though, enabling you to list him locally, while still being able to contribute your other crew additions/corrections (the system will automatically ignore any of your custom crew when contributing).

Be sure to lock your crew after adding any custom crew entries, as accepting an update to the crew section would erase them.

Stan Winston was one of the greatest men in his field.  Unfortunately, we can only deal with what the credits say, not what we want them to say.  In this case, you will have to enter him in the custom field.
No dictator, no invader can hold an imprisoned population by force of arms forever.
There is no greater power in the universe than the need for freedom.
Against this power, governments and tyrants and armies cannot stand.
The Centauri learned this lesson once.
We will teach it to them again.
Though it take a thousand years, we will be free.

Unicus has it precisely correct. The reason that it was decided to not allow (uncredited) crew is simplyu because 99% of such data is virtually impossible to document to any degree, and documentation would absolutely be a mjor requirement and a much bigger deal in this vein., that and we have no way to indicate (uncredited) in Crew.
